The
Nutrients in Vegetables

Statistics
If
you are eating commercial vegetables and fruits and think
you are getting enough vitamins and minerals, you might think
again. A Canadian study shows that in the last 50 years, the
potato (the most commonly consumed vegetable in Canada) has
lost a shocking 100% of its vitamin A, over half its vitamin
C, riboflavin, and iron, and over a quarter of its calcium.
According
to government statistics, fresh produce sold in Canadian supermarkets
today contains far fewer nutrients than it did 50 years ago.
British and USDA food composition charts reveal the same trend.
Almost 80% of foods tested show drops in calcium, iron and
other minerals, 75% show decreased vitamin A, and 50% lost
vitamin C and riboflavin. Thiamine levels have dropped in
33% of foods tested and niacin in 12%.
Surprisingly,
the biggest "loser," was broccoli, a food that symbolizes
healthy eating to many. All seven of its measurable nutrients
declined. For example, calcium levels fell 63%, and iron 34%.
Contributing
factors such as modern farming methods, seed selection for
concerns other than nutrition, and lengthy storage practices
are cited by Phil Warman, professor at Nova Scotia Agricultural
College, who said he has no doubt that the poor nutritional
content of food today is due to the emphasis on producing
cheap food. Dr. Warman emphasized that consumers should insist
on higher food values rather than cosmetic appeal. "I want
to eat a product that is as high in nutritional value as possible,"
he said. "Otherwise, I would eat sawdust with nitrogen fertilizer."
Tim
Lang, a professor at the Centre for Food Policy in London,
England, illustrates the point. "We think of an orange as
a constant," he said, "but the reality is, it isn't" In fact,
we have to eat eight oranges today to get the same amount
of vitamin A our grandparents got from a single orange, and
five to get the same level of iron. Vitamin C, however, has
increased slightly.
Most
people do not consume anywhere near the recommended five to
ten servings of fruits and vegetables daily. So, although

What
We Should All Know About Berries!
The
positives of berries have been know for years. Our ancestors
knew, as did the pilots of the second world war. The Greeks
and the Chinese, the Romans and the Native people also knew.
For Centuries even Millenia human civilization has used the
benefits of berries to enhance their eye sight, treat urinary
tract infection, improve circulation, treat infection, treat
diarrehea, and most recently even protect against cancer and
provide antioxidents for fighting free radicals. The advantages
of using berries in your diet for optimal health does'nt stop
there.
Blackberries,
strawberries, cranberries, bilberries, gooseberries, elderberries,
boysenberries, blueberries and rasberries are among the family
of beneficial berries for optimal health. Berries are rich
in vitamin C vitamin E, Bioflavonoids, Proanthocyanides and
Anthocyanides. These compounds are known to fight free radicals,
boost your immune system and improve your absorption of vitamins.
Ellagic acid, a little known and not well understood nutrient
is believed to offer some protection against cancer. Blackberries
also contain salicylate , the active ingredient in aspirin.
We all know about aspirins beneficial qualities.

at the U.S.D.A. Human Nutrition Centre found Blueberries to
be the most effective out of 40 different fruits and vegetables
for antioxident properties and activity. As far as eye health

properties of berries have proven a major force in eye health.
Certainly
one way we can help our bodies cope with growing old prematurely

Dr.
James Joseph's 1999 Blueberry study at the Jean Mayer U.S.D.A.
Human Nutrition Research Centre on Aging took 3 rat study
groups and fed regular diet to one group, fed nutrient extracts
to another and the final group was fed the equivalent in humans
of 1/2 cup of blueberries daily. After 8 weeks when the rats
were considered the equivalent of 70-75 years old, the physical
and mental capacities were challenged.
The
blueberry-fed rats ran faster, had better balance, and actually
reversed the age related motor dysfunctions they had demonstrated
prior to going on their blueberry diet. The blueberry fed
rats also displayed improved short term memory skills comparable
to skills and level of the younger rats. Their brains also
showed an improved ability to accept calcium, which has been
linked to age related mental illness. (If you have been following
through our site(s) you will have read or are about to read

rats to accept calcium as does Boron. Boron is one of the
